Zucchini Soup


Zucchini soup is a creamy soup . And it taste a little bit sweet. I balance it's taste by using fresh mint and dill. But still is a little bit sweet. Even if you dont like sweet soups, you must give this one a chance. It's absulately delicious.

In Turkey we cook soup for almost every meal. At least i am. I'm loving it. We have every kind of soup. This one is not prepared very often though. Our soups are not creamy as much as this. But i find it very filling and delicious. So i cook it very often. Everybody pleased with the result :)


Ingredients


4 zucchinies / sliced

1 leek / sliced

1 brown onion / chopped

6 -7 cloves of garlic / finely chopped

1/4 cup milk

8 - 9  fresh mint leaves / chopped

10 -11 fresh rosemary leaves 

2 tablespoons finely chopped dill

Salt

Black pepper

Powdered red pepper

You can add half a teaspoon of curry ( i didn' t have at this time so i could't use it )

ingredients of sauce


1 clove of garlic

1/2 lemon juice

Red pepper flakes

Directions


First slice zucchinies and leek. Chop the onion.



Mince the garlic cloves


Cook onion, garlic with olive oil in low heat until they are tender. I added spices in this process.


Add zucchinies, leek and salt. Saute for 5 - 6 minutes.


Add chopped fresh mint leafs.

Add 4 cups of boiling water. Cook it for 40 - 45 minutes in low heat. Turn the heat off.

Add chopped dill.

Use blender until the soup homogeneous and creamy.

Add milk and stir.

And zucchini soup is ready.

For the sauce mash the garlic clove.

Mix it with lemaon juice and red pepper flakes.


Add the sauce on top of your plate before eating the soup. Half a teaspoon of sauce is enough for a bowl / plate of soup.
