Zucchini and Cheese Muffins / Fırında Kabak Mücveri


Actually we fry the mixture in sunflower oil. But i like to prepare it in a more healthy way. So i prepare the mixture and put them in muffin paper. In original recipe, i put the mixture in hot sunflower oil with the help of a spoon and fry it. Here is my healthy version :))


  Ingredients


3 middle sized zucchini /grated

2 scallions / chopped

1 carrot / grated

2 eggs

250 gr goat cheese( you can use any kind of cheese actually, regular white cheese is fine too )/mashed

3 cloves of garlic / shredded

3 full table spoons of flour

2 - 3 branchs of dill ( only the leafs ) / chopped

2 - 3 branchs of parsley / chopped

Salt

Blackpepper

Red pepper flakes

Olive oil 

Muffin Papers


 Directions


Heat the oven at 175 °C

Wring zucchinies dry. I squeeze them like there is no tomorrow. They need to be really really dry.


And put them in a large bowl.


Add the eggs and blend them together.


Add carrot, mashed cheese, garlic, dill, parsley, flour, olive oil, spices and blend again. It should be a little stiff, but not too much.  




Brush the insides of the muffin papers with olive oil and put the mixture inside of the muffen papers. Nice and easy :)




Place the tray inside the oven and your muffins will be ready in half an hour.

It' s a very easy recipe and healty. Also very delicious. I need to warn you about something though. If you want to seperate the muffin papers, you can't. You will take the muffins with paper and eat them with a spoon. Or you pour the mixture to a ovenware from the beginning and cook it. So you can slice them and serve :)
