Cold Yogurt Soup With Pelted Wheat / Soğuk Çorba
This is the perfect soup for hot summer days. This soup frequently prepared at the middle and south regions of Turkey. Especially some big cities like Adana, Mersin, Sivas. Turkish people likes to runaway from the cities to plateaus and eat this delicious soup to fight the hot weather. People who aren't as lucky as them. ( as myself ). I just sit at my home in Ankara and eat this soup :)
Ingredients
1 cup chickpeas / boiled
1 cup pelted wheat / boiled
Bunch of spinach / chopped ( you can use chard or purslane too )
1,5 cup strained yogurt ( or 2 cups of regular yogurt )
5 - 6 cloves of garlic
Dried mint
Fresh mint leafs
Red pepper flakes
Salt
Cold water
Directions
Steep pelted wheat and chickpeas in water for a night. ( or you can use canned wheat or chickpeas )
When they softened enough, boil them.
Boil the spinach for 15 minutes and strain the water from spinach.
Pour the yogurt to a big bowl and whisk it. Add cold water until it reachs the right consistency
Add chickpeas, pelted wheat, spinach, spices, fresh mint leafs and stir the soup nicely.
Add a little bit olive oil before serve.
It's refreshing and filling. Better to serve with grilled chicken and pasta .
